Raw & Delicious Kale Chips

INGREDIENTS:

1 BUNCH KALE (curly kale is my favorite, but dinosaur kale, red kale, and collard greens work too!)

1 BELL PEPPER

1 CARROT 

1 CUP RAW PRESOAKED NUTS (you can use cashews, walnuts or macadamia nuts)

1/3 CUP NUTRITIONAL YEAST

juice from 1 LEMON or LIME

I also like to add TURMERIC and perhaps a dash of SALT

1 small scoop of RAW HONEY (optional)

LEMON ZEST from 1 lemon (optional)

1/4 cup CHIA SEEDS (also optional, but adds some bulk to the chips as well as some great nutrition)

DIRECTIONS:

1. soak the cup of raw cashews (or any other nuts) for atleast 2 hours, then rinse -- while nuts are soaking wash and remove stems form bunch of kale -- keeping them in large pieces, but removing thick stem-like pieces and put in salad bowl

2. put the soaked nuts and sliced bell pepper and carrot, along with lemon juice into the blender and mix

3. add the nutritional yeast, salt, honey and turmeric and mix well once more

4. sprinkle zest into the mix without blending

5. pour this mixture over the kale and toss like a salad until all peices are fully covered

6. place in dehydrator for 6-10 hours on a low temperature to preserve rawness, I usually do 105 degrees

If you do not have a dehydrator or do not care about the kale chips being raw you may use this same reicpe in the oven and bake the kale for 10 minutes and flip to the other side for up to another 10 minutes, at about 350 degrees. Enjoy!
